Our Long Pour: “Fresh Bay Gimlet”


This is an instant classic. I love the scent of fresh bay leaves, and this uses them in such a clever way. Taking the gimlet as a point of departure, it ditches the lime cordial and substitutes it with fresh lime juice and a quick homemade cordial of fresh bay/laurel leaves whizzed in the blender for 30 seconds with simple syrup.

I recommend busting out the Hendricks gin for this. The floral and fresh notes get along brilliantly with the bay leaf.

Fresh Bay Gimlet

2 oz. gin
¾ oz. fresh bay leaf cordial
¾ oz. fresh lime juice
Splash of sparkling water
Tools: shaker, strainer
Glass: coupe
Garnish: bay leaf and flaky sea salt

Shake the first 3 ingredients together in a shaker tin with ice. Strain into a coupe and top with a splash of sparkling water. Garnish.

Fresh Bay Leaf Cordial: Place 3-4 bay leaves and 6 oz. cold simple syrup (1:1) into blender. Blend on high for 30 seconds. Fine strain and store refrigerate up to 3 weeks.
